Just Another Meatless Monday……Great EASY Veggie Recipe!

Lemon Quinoa/Orzo/Pasta/risotto

  • Sautee one onion
  • Meanwhile shred 3 zuc’s
  • After onions are translucent add the zuc’s (or remove onion from pan and cook zuc’s separate, if your kiddos don’t like onion, like my DD).
  • Cook your grain/pasta according to directions
  • When zuc’s are tender, yet still have a good crunch remove from burner.
  • Mix EVOO and lemon juice to make a dressing. This is  all to taste add pepper, Mrs. Dash, whatever you like to dressing.

Toss grain/pasta in dressing. Combine zuc/onion mixture with pasta mix. Top with some good Feta (Woodstock Farms Org. is fab). I like it served cool, especially  in the warmer weather. Such a good refreshing meal! You can add Quorn Chik’n Tenders, too.

So easy. The hands on time is just slicing onion, grating the zuc’s, and mixing.
