Just another Meatless Monday….


In honor of the fall weather, and the sale on squash at NF’s  .69/per LB., stuffed acorn squash!!!!! So good!

I cut the squash in half, so that it sits relatively flat  (lengthwise). Take the seeds and string stuff out. Put it in a 9×12 pan with an inch or 2 of water. Microwave it for 5-10 mins, check it, microwave in 5 min increments until tender, but not mushy.

I stuff mine with brown rice or risotto, spinach, walnuts, and  parmesan or asiago bake on 350 10-15 mins. Take it out top with grated parmesan, and broil until the cheese starts to melt, a min or so. Serve with a salad with mixed greens, apples, sharp cheddar cheese (or Gloucester, or another tangy cheddar type cheese). Make your own balsamic to taste using EVOO, balsamic, salt, pepper, dijon mustard, and a sweetener (I use agave nectar). This is a filling and satisfying meal. You don’t NEED meat to be satisfied.

Enjoy! Squash is good for you and cheap, so get it while it is in season!
