Greek Pasta Salad

  • One box Safeway “O” Whole Wheat Pasta, Farfalle or Rotini
  • Feta Cheese (crumbled is easier)
  • Spinach (I buy the big tub of Organic from Sam’s)
  • Kalamata Olives
  • Sundried Tomatoes (I use jarred)
  • Olive Oil
  • Oregano (dried)
  • Lemon Juice

This is a great summer recipe, served cold! You can cook the pasta first ,put it in a colander, then cook the spinach in olive oil in the same pot.  You can do this the night before or AM, when the house is cooler. Toss the pasta with the other ingredients, and you have a healthy vegetarian dinner!

You can add Bell Peppers, Tomatoes, etc. Your choice. The pasta has protein, and the average American is consuming more protein than necessary.
